Honda makes great bikes. They have a good torque / hp / acceleration balance where you can cruise along or cram the throttle and it'll respond accordingly. 750s will do fine about 60-70mph on highway and shadows are fairly nimble to get you thru the back roads.. Personal experience; 750 didn't last me long but they're great "learners bikes".
. Welcome to the forum. The 750 should be your best bet for your starter bike. My 750 is my fourth bike and aside from wanting more power it fits me well and I'm happy. I'm 5'6" so forwards for you should be put on. Have fun.

I bought the Vulcan 900 custom as my first bike. I liked the narrow front wheel and how it handled at slower speeds. It felt wider than the Honda so it has the feel of a full size cruiser. The motor isn't huge but it's got some good torque in the low gears - I've taken it through the mountains without much issue.
